1 cup dried cranberries
1 cup raw almonds or cashews
1/2 cup medjool dates, pitted
1 tablespoon orange zest (plus extra for garnish)
1 tablespoon fresh orange juice
1/4 cup shredded unsweetened coconut (for coating)
Optional: a pinch of cinnamon for warmth
Prepare Ingredients:
Soak the dried cranberries in warm water for 5 minutes to soften, then drain.
Blend Base: In a food processor, blend the almonds or cashews until they form a crumbly texture. Add the cranberries, dates, orange zest, orange juice, and cinnamon. Process until the mixture forms a sticky dough.
