Golden Turmeric Pumpkin Soup

Boosts immunity, reduces inflammation, and supports digestion with warming spices and pumpkin.

Ingredients:

1 tbsp olive oil or avocado oil
1 onion, chopped
2 garlic cloves, minced
1 tsp fresh ginger, grated
1 tsp ground turmeric
1 tsp ground cinnamon
3 cups pumpkin purée (or roasted pumpkin cubes)
3 cups vegetable broth
1 cup coconut milk
Sea salt & pepper to taste

Instructions:

Heat oil in a large pot, sauté onion until soft.
Add garlic, ginger, turmeric, and cinnamon; stir until fragrant.
Stir in pumpkin, broth, and coconut milk. Simmer 15 minutes.
Blend until smooth (immersion blender works best).
Season with salt and pepper. Serve warm with pumpkin seeds on top.
