1 large head of cauliflower, cut into florets
3–4 cloves of garlic, peeled
2 tablespoons olive oil or unsalted butter
1/4 cup unsweetened almond milk (or milk of choice)
1/4 cup grated Parmesan cheese (optional, for extra flavor)
Salt and pepper to taste
Fresh chives or parsley, chopped, for garnish

Instructions:

Prepare the Cauliflower:
Bring a large pot of water to a boil and add a pinch of salt.
Add the cauliflower florets and garlic cloves, and boil for 10–12 minutes, or until the cauliflower is very tender.
Drain and Dry:
Drain the cauliflower and garlic well, then pat the florets dry with a clean kitchen towel to remove excess moisture. This helps achieve a creamier texture.
Blend the Ingredients:
Transfer the cauliflower and garlic to a food processor or blender. Add olive oil or butter, almond milk, Parmesan cheese (if using), and a pinch of salt and pepper.
